Recipe: 12 minute Macaroni & Cheese – from scratch!

Want macaroni from scratch in 12 minutes with ingredients you’ve got in your pantry?  This is the recipe for you…..I eat this at least once per week (of course on running days).  My sister and I LOVED weekends we would go to Grandma’s house, watch Tom & Jerry and Fat Albert and eat Micro Mac out of small metal bowls.  I had a macaroni tasting party at my house not long ago and people couldn’t get over the fact it only took 12 minutes (of course all the parents voted it up.)

Here’s the recipe.

Micro. Mac
Rating: Flat (Easy)
Prep time: 5 minutes
Cook time: 12 minutes

2 cups pasta (I like medium sized shells.  You get more sauce vs. pasta)
2 cups milk
1 cup water
1/4 cup butter cut into small cubes
1/4 cup flour
1/4 teaspoon each salt / pepper

2 cups cheese (I use a combination of regular cheddar and either pepper jack or Irish cheddar).  *tool tip – a good box grater works great for this!

Mix all ingredients except cheese in a microwave-safe bowl with a lid.  Cook on high for 6 minutes.  Stir.  Cook uncovered for 6 more minutes, or until pasta is cooked.  Stir in cheese.  It’s best if you let it sit for 5 minutes.  Good luck with that though…
